Remember my super yummy, healthified Salmon Croquette recipe? Well, if you did not notice, there was also some odd looking mashed stuff right beside it.
Oh, I love getting creative in the kitchen. I have made mashed cauliflower before, as well as mashed turnips. However, this time I did a mix of some root vegetables alongside cauliflower... and it turned out wonderful!
My wonderful cousin gave me her new Kitchen Aide mixer towards the end of summer (she claimed she never used it and though I would be a better owner. Haha!), so I thought maybe I should try to do the "mashing" part with the mixer. It didn't work out quiet well, and I had to do some mashing manually... but hey, worth a shot!

Paleo Cauliflower and Root Mash
1 package frozen cauliflower, or 1 small fresh head
2-3 large carrots, chopped roughly
2 cups chopped beets
1) Place all ingredients in a large pot and bring to a rolling boil for about 5-7 minutes, or until soft.
2) Drain your veggies and place them into the mixer bowl. I sprinkled some nutmeg in mine because I know carrots compliment it well. Omit if you want to keep it more savory.
3) Blend (or mash) until it reaches desired thickness. Add melted coconut oil if desired!
Seriously... how easy is that?! Not that there is anything wrong with mashed potatoes... but when you want to opt for a less starchy option, this is DEFIANTLY the way to go.
