My First Q&A

Jojo and Paul's Hummus RECIPE + A Late Thanksgiving Recap

Hey there Clean Eaters!!

I know it is already past November (but not to late to participate in the challenge!), but I still feel the need to recap my awesome Turkey Day!!

I also am including an awesome recipe from my cousins, Jojo and Paul!

Thursday:

We woke up that morning, and I did an awesome leg workout to start the day off right. We headed out to my grandmother's house, about an hours drive away, in East Texas. We were going to be staying until Saturday, because there was another family get together that day that we all were going to.

Because the Saturday get together was going to be bigger, we decided to not do much for Thursday. It was going to just be my mom, sister, uncle, grandmother and I on Thanksgiving day, so there really was no need to do anything special food wise when Saturday would make up for it!

Anyways, I made a dish for myself (and the others, if they wanted it!) while everyone else had squash and broccoli casserole, some quick make stuffing, and mashed potatoes. My grandmother ordered half a smoked turkey from a local barbecue shop (SO DELICIOUS!). Dessert was some Mary Calender pie.

Like I wrote about in my "Healthy Thanksgiving" guide, many home made dishes are indeed, not so "home made". All these items had such processed, pre-made, and canned ingredients (trust me, I helped my grandmother make them). I was more than happy to make some separate, whole food items for myself and anyone else who wanted it.



My dinner was half an acorn squash stuffed with a raisin-pecan stuffing, and some turkey! 

Saturday:

That morning, I woke up and did a shoulder and cardio workout before heading out to the get together.


My breakfast was simple, lettuce wraps with some egg and leftover turkey. 

I was SUPER excited to get to see all the family and friends at the party! I knew at least some dishes I could enjoy, because my whole-food enthusiast cousins, Jojo and Paul, always bring healthy stuff.


Seriously... these guys are AMAZING. Paul used to be a chef, for one thing! They also make their own jams and hot sauces, pictured above (from the fruit off their own fruit trees, and the vegetables from their own garden!!).


They are on a new kick, involving sprouts. They brought in a giant sprout salad made of tons of sprout varieties... they even had broccoli sprouts! The dressing was wonderful, a blend of tomatoes and basil with balsamic vinegar and olive oil. They also brought some goat cheese spreads, which I sampled (I don't think my stomach liked it too much after the fact. Darn lactose intolerance!)



Oh, did I mention they pickle their vegetables too?



My plate ended up looking like this: A leg from the turkey (I actually ended up eating both...), some sprout salad, pickled veggies and hummus, and some goat cheese topped with some of my cousin's home made jam!

I also decided to treat myself. Paul made a coconut cake... an incredibly non-healthy one at that. He used sugar, regular butter, and other milk products... things I ALWAYS steer clear away from.

However, I eat 100% clean and healthy 365 days a year. You know my feelings towards the 80/20 rule, and how "moderation" doesn't work for me. So if I ever crave a sweet, I make my own healthy version... but, this cake was not processed. Sure, he used sugar... but it wasn't the fake, harmful kind. Yes it had other ingredients I didn't agree with, but you know what? It was anything BUT something that I could buy from the store, full of chemicals.

So... I had some! Boy, was it yummy. However, my stomach SERIOUSLY didn't agree. I actually woke up the next day vomiting (sorry for TMI, but I speak the truth here on Clean Eating Teen!)

Kinda just goes to show that your body KNOWS what is good for it, and what isn't, huh? ;)

Now, on to the recipe I promised!! This is the recipe for the hummus Jojo and Paul brought.



Jojo and Paul's Hummus
4 cloves garlic
1 tsp sea salt
process first in food processor to chop garlic fine.

2 15 oz cans garbanzo beans (good store brand or Progresso) drained but reserve liquid.
1/4 cup tahini (important do not leave out)
1/4 cup olive oil
1 tsp ground cumin
1/2 tsp ground cayenne pepper
juice of 1 lemon

Process with garlic in food processor until smooth adding reserved garbanzo liquid as needed to get desired consistency.

And there you have it folks!! A recap of my awesome Thanksgiving, plus a super yummy recipe that I suggest trying NOW. It is so much cheaper, and tastier, than buying store bought. It is even better than my past hummus recipes

All About CLAUDIA: A Healthy Living Inspiration

I introduced the wonderful Claudia, writer of the blog Chicaloverde, a few months ago. 

Since then she has guest posted other wonderful things, such as this amazing Arepas recipe!! 

I adore Claudia, not only because she is sweet, smart, and kind, but because she is SO down to earth. In a world full of "health gurus", many of which are very artificial, Claudia shines a special, wholesome light like the star she is :) She is such an inspiration for me, and I know many others too!

I asked Claudia some questions recently to find out more about her and her life, and here are her responses! 



1) What is your biggest dream (or dreams) for your life and why?

My biggest dream is to be able to help and inspire thousands of people to embrace a healthy lifestyle so they can inspire others to do the same and therefore, one person at a time, the earth will become a greener and happier place to live. 

I want to do this because, based on my personal experience, people don't live their lives to its fullest. Sometimes they think they are happy or healthy but hey haven't experience this to it maximum potential.  If we make changes and guide others to embrace a different lifestyle from what the regular American is used to, our future generations will live longer and better.

Eventually I'd like to have kids, a running/health coaching business and maybe even open a clean coffee shop where I can offer to my customers good quality foods that will nourish them from the inside out. 


2) How has your Venezuelan background influenced your healthy approach to life? How do you think your healthy lifestyle might benefit the future of other generations? 

My background has definitely influenced my habits a lot. When I moved to the U.S. I started putting tons of crap into my body because I found a complete different world from the one I've lived in the past 24 years. Also, because I started running longer distances I thought I could eat whatever I wanted and that's another reason why swedish fish, tortilla chips, creamy pastas and snicker bars became part of my daily diet.

After three years of eating junk I realized I was not happy with the way I looked and felt so I decided to go back to my roots. I grew up eating tons of organic fruits, lean meats, vegetables and whole grains and switching back did the work by itself. Now I feel better than ever and my performance as a runner has improved a lot.

Hopefully my healthy lifestyle will benefit the future of other generations by inspiring them to live a healthier life and make wiser choices when it comes to food and exercising.

3) If you could eat only one yummy food for a month, what would it be and why?

Definitely plantains! Thats my favorite food! I grew up eating them every day and now I rarely do since they are hard to find. I love their taste and I feel they are very versatile. Also, my grandfather used to say that plantains are the most complete food and that a person could live on them for a year.



4) What is your favorite form of fitness? 

Running. It gives me physical and mental freedom. When I run I have time to think about so many things and some times even great ideas come up! This sport has also given me some of the best friendships I have.

5) What does a day in your life look like?

Well, It always varies. 

I usually wake up early, have a cup of warm water with lime juice, a banana and then go out for a run or to a  yoga class. Then I come home and have a big breakfast (usually eggs with veggies and fruits).

After that I start taking my online classes or doing some sort of work like sending e-mails, writing on my blog or writing articles for other sites. 

Around 3 p.m. I start doing stuff around the house like laundry or cleaning and then my husband and I go to the grocery store to get whatever we are going to cook for dinner. We like to eat fresh so we go to the store almost every day.

When we get back it's usually around 6 p.m. so we start cooking together, we bless the food, eat it and then watch some TV or if I still have some work to do I get on that.


I go to bed around 10:30 pm but usually don't fall asleep until 11.

Staying Healthy During Cold and Flu Season: Healthline

Staying Healthy During Cold and Flu Season



Flu season is among us, and according to the rest of this year’s weather forecast, we are in for a cold one.  Of course, along with bad weather comes those pesky colds and flu, and to date, this world has yet to find a cure for either. There are some prevention methods you can incorporate into your life that just might get you past this season without a scrape...or more accurately, a sniffle or a cough. Yes, these tactics can significantly reduce the risk of getting these illnesses during the cold months, and these preventative steps can save you a lot of time in bed.


Getting serious about preventing the common cold and influenza can not only help you avoid ailments, but it can also make your life a whole lot healthier in the process, and provide you with terrific lifestyle changes in general, whether you’re sick or well.


Many people around this time will race to the doctor for a flu shot, and true, this is certainly a method that can be fairly effective. But if you want to avoid the needle, there are equally effective and natural ways to employ in your life that will help you avoid the colds and influenza. Check out these tips for reducing your risk of contracting colds and flu, and stay well this cold and flu season:





First and Foremost, Quit the Bad Habits


Drinking alcohol in excess can suppress the immune system in several ways. Heavy drinkers are more prone to initial infections as well as secondary complications.  Alcohol also dehydrates the body, and can cause you to lose more fluids from your system than you take in.  Fluids are fantastic for preventing colds and influenza, and without fluids, you are more prone to contracting these illness, as well as others.  Significantly reducing your alcohol consumption will help you avoid these ailments.
If you’re addicted to the cigarette, it’s time to take charge and quit. Smoking is worse that heavy drinking, and according to statistics, heavy smokers get more severe colds and more frequent ones than non-smokers. Even exposing yourself to secondhand smoke can take a toll on the immune system because smoke dries out your nasal passages and paralyzes cilia, (delicate hairs that line the mucous membranes in your nose and lungs.)
Cilia sweep cold and flu viruses out of the nasal passages, and without them, even one cigarette can paralyze cilia for as long as an hour.  That’s just enough time to contract a nasty cold or flu. Heavy smoking can also dry out your adrenal glands, so it’s best to cut back or quit altogether. Besides saving your lungs and boosting your immune system, you’ll enjoy a much healthier life, free from worse conditions like stroke, lung cancer and emphysema.




Diet and Exercise


Eating nutritious, wholesome foods is top-notch insurance for reducing the risk of flu and colds. In fact, a good diet, rich in fruits and vegetables, can sometimes prevent them altogether.  Phytochemicals in vegetables and some fruits are those natural chemicals that give you the vitamins in food a supercharged boost. Eating dark green, red, and yellow vegetables and fruits have been proven to nourish the body significantly, which supports your immune system and fights off the common cold and influenza. Additionally, foods rich in antioxidants like sweet potatoes and kiwi, can fight free-radicals, which also contribute to disease and illness.
Exercise is another proactive way to battle the common cold.  In fact, consistent exercise is the king of killing viruses. Specifically, aerobic exercise speeds up the heart to pump larger quantities of blood, which in turn, facilitates you breathing faster to help transfer oxygen from your lungs to your blood.  Exercise also makes you sweat, and sweating helps increase the body's natural virus-killing cells and eliminates viral toxins.  Starting and maintaining a regular exercise program is perhaps the number one, natural cold remedy around.




Chill Out

Worrying about getting sick can actually manifest illnesses. Conversely, relaxing about ailments can actually boost your immune system.  Stress attacks your immune system and causes it to weaken, making you more susceptible to colds and the flu. If you can teach yourself to relax and reduce your stress levels, there is evidence that suggests that relaxation boosts interleukins into your bloodstream, leaders in the immune system response against flu and cold viruses.
You can train yourself to relax through various relaxation techniques such as yoga and meditation. Other methods include a hot bath or shower, a massage or acupuncture. Those who can relax will change their blood chemicals, and reduce the risk of catching a cold or flu bug. Try some of these relaxation methods.  You will be surprised at the difference they make, including lowering the risk heart disease, high blood pressure, high cholesterol and hypertension.




Clean Those Grubby Paws of Yours

Flu and other cold-like conditions are usually delivered and spread through human contact. When someone with the flu sneezes onto his hand and then touches an object, these germs can live for hours on that object, only to be picked up by the next person who touches it.  Using hand sanitizer or washing your hands often kills those surface germs, and is an effective way to reduce the amount of spreadable germs.
Germs cling to bare hands,
and sneezing and coughing in them can often result in transferring your germs to others. So, when you feel a cough or sneeze coming, use the inside of your elbow or a tissue to muffle it.
Finally, viruses enter your body through the eyes, nose and mouth. Touching your face is a primary way people catch colds, and it is also the most common way people pass them along to others.  So try to avoid touching your face, or use a tissue if need be.


Stay the Course

These prevention suggestions won’t totally assure you of a cold-free season this year, but they will do a great job at decreasing the likelihood of contracting germs, which cause these illnesses. Practicing these type of prevention methods, as well as a conscious awareness that germs are all around you, might just save you from another round of the sniffles, aches and coughs this season.  You’ll discover that incorporating these tips into your life will prevent sickness, keep you healthy and give you a boost of energy in the process.

Chickpea & Spinach Date Stuffed Acorn Squash !! (Vegan and Vegetarian)


Another awesome recipe is here to help keep you on track during the No Excuse November Challenge!! 
(Which, yes, does extend into December. Haha!:) )

Not too long ago, I posted another recipe including stuffed acorn squash.

In that same post,I also promised to be more creative with the cooking method of said squash. Well, folks, that time WILL come... however, today is not that time. Baking it is just too easy and good to pass up.

I love that they are in season right now! Usually we do not buy them because they'e nearly always $2/lb at the grocery store. But, now that we have been seeing them at our local farmers market (plus the fact that Albertsons just had a sale for $0.75/lb! Haha.), we stocked up on a few at home.

I was inspired for the stuffing part of this recipe from The Gracious Pantry's Clean Eating Spinach and Chickpeas.  If you aren't familiar with Tiffany, seriously go check her out NOW. I have been following her site for a few years now. Really, she was the first food blog I started checking on a daily bases. She was a huge inspiration for me to start cooking for myself... seriously, I would get in trouble at the school computer lab for being on her site and not finishing my power point!

Anyways, here is a super simple recipe that is very filling, and really tasty. It is also vegetarian and vegan friendly, but can easily be made for a more carnivorous eater by adding some ground turkey or beef that has been browned.

I know the seasonings of cumin and cinnamon may seem very odd together, but once you try it, you won't be thinking so! They compliment each other really well, and are what makes this dish so unique.


Chickpea & Spinach Date Stuffed Acorn Squash
Serves 2

1 acorn squash, halved
1 15 oz can chickpeas
4-5 dates, chopped
1 TBSP cumin
1 TBSP cinnamon
dash of sea salt, optional
handful of baby spinach
handful of kale
handful of collard greens
1/2 cup unsalted vegetable stock

1) Bake your squash at 450 degrees for around 40 minutes, or until soft.

2) Rinse and drain your chickpeas. In a pan, add your stock over medium high heat.


3) Chop your dates, and add them, the greens, and the spices to the pan. Toss around a bit so the spices coat the greens, and cover the lid.


4) After a few minutes, add your chickpeas and cover until the greens are wilted. Reduce the heat.

5) Stuff each acorn squash half with the mixture, and enjoy!

You could also use raisins in place of the dates, as on the Gracious Pantry, but I thought the dates give a slightly different flavor.

Elf For Health 2013!

Hey there Clean Eaters!

Way back when (well, a year ago!), I wrote a post about my participation with an event called Elf For Health Holiday Challenge.

The event is a large, online support system created my Lindsay from The Lean Green Bean and Elle from Nutritionella.

A bit more information on the event...

It is a challenge that runs through late November to late December. You have daily "challenges" to help keep you on track during the holidays . These challenges fall into four categories: "Food, Fitness, For You, and For Others."

Over the course of the challenge, you are assigned an "elf"... aka a buddy that you email and support daily, that helps you with personal goals as well as the Elf Challenges.

Not to mention, weekly there are prizes for best Elf! Some of the awesome sponsors include Manitoba Harvest, Nature Box, Nutzo and more!!

How awesome does this sound? I am totally ECSTATIC to get to participate again this year. I did decently last year, but REALLY want to kick things up a notch this year. My elf and I are totally going to dominate! :)

Speaking of my "elf"... LAST year I had the awesome opportunity to be partnered with Kristen, a fellow blogger. She was an amazing person to get to know and we had lots of fun with emailing eachother and doing the daily activities.

This year, I am blessed with being introduced to a wonderful girl named Megan. We have emailed eachother a few times, and already I can tell we will become fast friends :) We both love to workout, eat healthy, and heck... we both even like romantic movies! ;)

The challenges have JUST began... so I am sure I will fallow up this post with some info on how things are going!

I Am Thankful for YOU

Just wanted to do a quick post to let you guys know how THANKFUL I am to have you as readers.

Sometimes, in the blogging world, it can feel like I am writing to no one but myself. It is hard to continuously work hard at writing, posting, ext when you always wonder "Does anybody even read this stuff?"



Don't get me wrong, I blog because I LOVE it. I love to share recipes, workouts... I love to be able to connect to others who are health and fitness nuts. In general, I love to write!

But I AM just human after all... and that being said, I kinda can get selfish sometimes. Some days, I really just want a big readership on my blog...

The point of this post is to let YOU, anyone who reads this blog besides myself or my momma, know that I really am SO THANKFUL for each and every time you type in "Clean Eating Teen" in the search bar, click on my post via a social network, or even make a comment. It means so much to me to know that others like to read what I have to offer :)
