As you know from my past experiences, it can get tricky to capture every meal Tuesday to make this Wednesday post. So I decided to try something different this week... I've compiled a few pictured from meals throughout my week (not just yesterday) to share with you all!
I like this format a bit better, so let me know what you guys think of it. It is similar to The Lean Green Bean's "Weekly Eats" post.
Breakfasts:
Above: Peanut butter with an apple and a hard boiled egg
Below: Peanut butter and 1/2 an apple, with a TBSP of homemade hummus and carrots. Also a slice of Pumpkin Walnut Oatmeal Bread with the butta'.
I have a confession. I am IN A BREAKFAST RUT.
Don't get me wrong, I love my peanut butter and everything... I just think things are getting boring. The same basic things over and over again... any suggestions on recipes?
Lunch:
Vegetarian Chipotle bowl with brown rice, black beans, TONS of fajita veggies. corn, pico, and lettuce. I tossed some Tabasco sauce on there too. Talk about sodium overload. But I only go here every other week or so... so it is alright!
I am bad at lunches. Really, when it comes to taking pictures, I FAIL at this meal.
Here's a picture of a lunch from the weekend, CHIPOTLE! One of the few restaurants I like going to. I cook 99% of my meals at home... Chipotle is the occasional treat, as they are a restaurant that I trust and appreciate. I really love their recent pledge to go GMO free, plus they cook everything FRESH right there. Ingredients are also bought locally when possible, and meat and dairy is hormone free!
Other lunches included dinner leftovers, some pictured below.
Dinner:
Top: Baked Acorn Squash stuffed with sauteed brussle sprouts, plus a bell pepper stuffed with turkey meat.
Middle: ALL HAIL LEFTOVERS! This was so easy and so good. I tossed an acorn squash in the oven (can you tell I like me some winter squash?), stuffed it with leftover beans. The beans were a mix of pinto and great northern, with some summer squash and other veggies sauteed in there. Similar to my lentil recipe.
Bottom: A new chicken recipe... done in the crockpot! So tasty, simple, and the tomato paste used makes it SWEET. Recipe to come soon!

WIAW #12!

Happy HUMP DAY everyone!
But all kidding aside, I LOVE that commercial. Geico is getting good.
You know the drill. Time for WIAW!
Breakfast:
A rehash of last week's breakfast (at least the oatmeal part). I had it with some carrots and peanut butter... I didn't want to finish all the carrots so I ended up using most of the peanut butter in my oatmeal. I think it tastes better in the chocolate oatmeal than in regular.
Lunch:
An ear of corn from the State Fair of Texas! A recap post is coming up, no worries.
I also had an apple with some almonds.
Dinner:
We used our grill and made some chicken! It was wonderful, crispy on the outside and SO moist on the inside. It wasn't tough at all, it cut as smooth as butter!

WIAW #11
Hello guys and gals! Time for another dose of WIAW, featuring the Clean Eating Teen's food!
YUMMY!! Oh, words can not even describe how wonderful this tasted.
And apple and peanut butter with...Chocolate oatmeal made with 1/2 cup rolled oats, spoonful cocoa powder, 1 cup water, cinnamon, and honey.
I usually refrain from all types of sugar except that found naturally in fruits, but after reading a blog post from Girl Meets Nourishment on Why Your Body Needs Salt and Sugar, I decided to try and in cooperate natural, local honey in my diet more often.
My honey is from my uncle. His neighbor gave to to him after he harvested it right in their town! My uncle only lives 45 minutes away, so that's about as local as you can get!
Lunch:
Healthy open faced sandwiches, with my homemade bread, some homemade hummus, turkey cutlet, avocado, and veggies. With a side of carrots and peanut butter of course!
Dinner:
More lentil quinoa melody. I documented making this one, so a recipe is coming your way!

WIAW #8
For this addition of WIAW, let me warn you.
These pictures are....*gasp* actually out of my normal rotation! I figured you guys were getting really bored of the same lettuce wraps, apple and peanut butter, and paleo pancakes... so voila! A few new items have popped up into my eats.
Of course, though, there is still peanut butter..
Breakfast:
1/2 cup rolled oats with 1/2 and apple and 2 TBSP unsalted peanut butter.
I think this is the first time I have ever put the nut butter in my oatmeal. I thought I would give it a try because it seems like EVERYONE does it... sheesh, I can't go to ONE blog or have ONE visit on Pinterest without seeing peanut butter being swirled in the mushy, grainy goodness.
However, I don't think I really cared for it this way. DON'T get me wrong, I love my peanut butter... but I think the heat of the oatmeal kind of dulled the flavor a bit. It seemed deeper, more nuttier in a sense, and I did not like it much.
Lunch:
Some fresh chicken meat from the deli with a abit of a corn and black bean mix (a bit like the mix "Texas Caviar") in a whole wheat pita pocket.
After examining the back ingredients further (even though theres only like, 5), I realized that the Sunflower oil used in them are not the best choice. I won't be buying them again. Back to Food for Life for me! (Or, of course, just stick with my homemade bread!)
Dinner:
Baked sweet potato, steamed kale with green beans and broccoli, and leftover chicken from last night's crock-potted dinner.
I sprinkled cinnamon on the sweet potato after the fact, because it makes it more like a dessert. :D
I'm kinda proud at the fact that these pictures aren't the same old, same old!

Healthy Camping 2.0: Food
If you have not already read my first installment of healthy camping, Healthy Camping 1.0: Working Out, check it out!
This is part two, about how to eat correctly while out on your trip. So many people relate camping to unhealthy snacks, prepackaged items, and overall eating complete junk. But honestly, why is this? I know that buying quick, ready to go foods seems the easiest route... after all, you're out in the WILDERNESS, what else is there to eat when you can't cook on a stove?
Uh... who needs a stove?! Camping is honestly the IDEAL environment (no pun intended) to prepare EASY food in a nutritious way. How do you think the caveman cooked their food? Or those surviving in the wild? They certainly could not have access to a Walmart for a Twinkie or Cheeto run, or have the ability to use a stove top. What did they use? A fire... something that you most likely have as well when camping!
A fire is your best friend when preparing healthy camping food. Most camp grounds will offer a fire pit at your location, and often times even have a wire or metal tool that can be placed over it. This can be used not only to keep the fire down, but also to hold foods as they are being cooked! If your camp ground does not offer this tool, you can bring one yourself (such as a wire rack).
With the fire, you can easily cook raw meats. You can cook vegetables kabob style, or wrap them in foil and let them "steam" a bit (if you do this, I suggest adding some liquid in the form of chopped tomatoes or perhaps a bit of broth or water). Also, potatoes are easily cooked if put in a fire pit and wrapped in foil.

Also, try cooking over the fire using pots or pans. Instead of roasting marshmallows on a stick, stab on meat and roast them the same way!

Try bringing your own grill, either charcoal or electrical powdered. On my recent trip, my godparents brought their grill and we used this each night instead of the fire. It works just as well!
If you have access to an electrical output at your site, you could bring a small toaster oven. We did this as well, and we cooked potatoes this way. It takes a while, yes, but how much easier does it get to throw some food in there in the morning, and when you return in the afternoon or evening, it is done?
Make sure to bring basic utensils. Forks, spoons, and napkins can be throw away if wanted, but I suggest you make sure and bring at least two quality knifes with you to ensure you can chop your meats and vegetables.
Don't forget seasonings too! You can do alot with the basic salt and pepper, but I am also talking about simple, not always "ground" seasoning. Cooking your meat in foil alongside an onion creates tons of flavor, and you can try adding some tomato paste in with a soup, meat, or vegetable mix to add a bit of tang.
Now, some might be wondering how you safely bring raw meats and vegetables to a camp site without them spoiling first. If you choose to buy them before you arrive, pack them in a cooler. If you know your camp site is within realistic, drive-able range of a grocery store, try settling yourselves in the site and then make a quick trip to the store. Or you know, you could be really awesome and hunt your own meat... but that is only optional. ;) (However, any fish you catch really can-and should- be eaten!)
As far as storing meats and veggies go... again, stick with a cooler. Some people have mini fridges (if you are in a camper like I was, or you are staying in a cabin)... but otherwise, just make sure you have access to fresh ice daily, and you will be fine.
Most of all... BE PREPARED!! PLAN AHEAD!! Don't go out to the site without knowing what you are going to be doing. You have already planned and packed your clothes and such, so why not also be ready when it comes to food? Perhaps the week you are leaving, write down what you plan for doing at meal time, and make a list. That way grocery shopping and cooking will be easy.
Here is a view of my campsite. You can see the fire pit (which we did not use this time), and the grill my god parents brought in the back there!
Now, I am not saying that all pre packed snacks are bad. I utilized a few of these things when I was camping, and highly suggest you do so as well. Some healthy, ideal meal or snack items would be:
- Hummus
- Baby cheese rounds or sticks
- Sliced up fruits or vegetables
-Unsweetened fruit or applesauce cups
-Small packets of peanut butter
- Packaged, unsalted nuts
I know there are more, but these are just some off the top of my head. Let me know if you have other suggestions for this list!
I was lucky enough to also have access to a gas powered stove (yes, I know this sounds so hypocritical of me! But USUALLY I don't have a stove what so ever.) That being said....
I made makeshift Paleo Pancakes. I didn't have a pan so they were more like... sweet, scrambled fruit eggs with peanut butter? Weird, but oh well. It worked!
These are just some basic guidelines on how to stay on track with your food while camping. With proper preparation, there is no reason ANY traveling should ever be used as an excuse to slack on your diet.

My Life Lately: "I'm a Blogger" + Dynamite Peanut Butter?!
I really enjoyed posting my first "My Life Lately" a while back. Perhaps because it made me feel like other bloggers I read, whom I actually enjoy hearing about the regular things that happen to them on a daily bases. It's almost like you've got a weird, friendship-like bond that is developed over the interwebs? I am not sure how to explain it, but if you are also a blogger or an avid reader of some, i'm sure you know what I mean.
Or perhaps it just gives me an excuse to snap pictures every few seconds?
"Excuse me mam, but there are no cameras allowed in the museum."
"Oh no, trust me. I'm a blogger."
I tried to explain the reasoning on posting things like this on Clean Eating Teen to my mother. She was confused, asking "why are you talking about going to a pool party when you're website is about fitness and health...", and I tried to point out that it helps improve the quality and diversity of content, plus it is fun for your audience, and fun to write... She still did not get it. Oh well, maybe some day momma! ;)
Let's start with the ending of Vacation Bible School. I talked about this last "My Life"... I was a crew leader for a group of first graders, and boy, were they something to talk about! I was really blessed with a wonderful batch of kiddos, and for the most part things sailed smoothly. This picture was taken the last day. I'm standing next to my momma, and two of our best friends who also took part in helping out.
They told the kids (and leaders, if they wanted!) to dress up like knights, kings, and queens for the last night, to end the week and the Kingdom theme with a bang! That's why I am wearing a crown in my hair. Actually, its just a necklace, but it worked... so no need to talk specifics. ;)
My sister often goes to a horse barn with her best friend, who actually owns one of the horses. My sister has been learning to ride herself, and my mom and I came out to watch one day. It was smelly, dusty, and HOT! I REALLY respect the owner of the place, as well as my sister and other riders, so taking so much time and effort out to take care of the horses. It is a TON of work, but they love every moment of it.
Up top is me (please excuse my face) with a horse. Below is a picture of my sis riding!
While out at the barn I found these... my sisters friend brought them as a snack. Not the healthiest of choices, but definitely something...uh, creative?
I mean, REALLY Lays? I am not sure to be in awe of this creation, or in total disgust. Sure, the concept is really neat, but one look on the back of this... how in the world do they obtain "chicken flavoring" ? "Waffle seasoning"? Sigh.
I also did my fair share in peeling and de-veining some shrimp for my last seafood recipe. Goodness, I know they taste good, but multiple times during this procedure I felt as if it wasn't worth it. Those little critters smell NASTY!
My best friend Taylor, whom I've written about before, is just a big of a health nut as me. She LOVES to lift heavy, and boy... can she EVER! We went to the gym together (her local gym, I just got a 7 day free pass), and I was SHOCKED by how much stronger this girl is than me. My workout literally IS her warm up!
She can leg press 200 lbs, people. With proper form. She's hardly 15 and does 1/3 the weight her dad can!
I am in such awe... and yes, jealousy. Not only because she is a BEAST, but also because she has access to the gym and heavier weights than I do. I can only use what I have at home.
So after one of our workouts, we walked back to her place (the gym is close) and made ourselves something to eat.
She also is a peanut butter freak. They just ran out of a jar, so there was an un-open one in need of being stirred. Oh man... the job of stirring the peanut butter.
We both are aware of the mess it can cause (hence the reason for the massive wad of paper towels under the jar!). So we braced ourselves, got out a spoon, and got to work. And WHAT IN THE WORLD?! The peanut butter seemed to have fought us back!
I am not joking. At all. The bent spoon in the picture is COMPLETELY done by the peanut butter. We shoved the spoon around, back and forth, and uh... yeah. This happened! Talk about some DYNAMITE PEANUT BUTTER.
And now, ladies and gentlemen, I will end with this.

HEALTHY Brownies?! Naturally Sweet...Sugar free, Dairy Free, Egg Free, Flourless
You read that RIGHT. "Healthy" and "Brownies" in the same title... how can this be?
A while back I remember reading something about brownies made out of black beans. My initial thought was, well, probably what everyone's was..."What the heck?!"
After many recipe readings and reading reviews, however, I decided to give it a shot. Most everyone was saying they tasted great, and heck, I am always up for a challenge in the kitchen.
That being said, I REALLY wanted to health-ify this recipe up. I do not eat sugar, so I knew using any would be out of the question. I don't even use stevia, so that made things even trickier! I turned to my trusty friend, the beloved dried date, for my all natural sweetness.
My best friend Taylor spent the night last night, so I kind of made these especially for our movie date! She also is a health nut, so using black beans in brownies came as no surprise to her. She makes healthy desserts frequently and loves trying new things, so I already figured she would dig these... but boy, I still was surprised when she chowed down on nearly half the pan!
No worries there, chicka. These babies are protein packed, and honestly guilt free. Plus my sister and mom did not want any... I am glad she loved them so much, otherwise I would have been tempted to eat the whole thing myself! ;)
I really wanted something that was going to be delicious, fudgy, sweet... but nutritious too. I read many different variations before finally coming up with one that worked for me! So yes, people... you are reading this correctly, no need to rush to the eye doctor.
A HEALTHY, GUILT FREE BROWNIE IS POSSIBLE.
Healthy Brownies
Yields 9 small brownies, one small-medium pan
15 pitted dates
1 can black beans (I actually used black soy beans)
1/2 cup 100% cocoa powder
1 TSP baking powder
2 TBSP vanilla extract
1 TSP nutmeg
1 TSP cinnamon
1/2 cup unsweetened applesauce
1/4 cup chopped walnuts, optional
1) Preheat your oven to 350. Soak the dates in warm water for a few minutes.
2) Place the dates, the beans, and the cocoa powder in a food processor and blend until smooth.
3) Add in the remaining ingredients, besides the walnuts, and blend until mixed.
4) The mixture should be very thick and fudgy. You do not want little specks of bean or date in the mix, so make sure they are blended smooth before transferring your mixture into a relatively small-medium sized brownie pan. I used a rubber spatula for this.
5) Smooth down the mix so that it is evenly spread. Top with walnuts, if desired.
6) Cook in the oven for about 35 minutes, checking to make sure it does not burn. You may have to leave it in longer... you want it to feel slightly firm, but the sides should not be burnt.
NOTE: I nearly died when I first took these out of the oven, I thought I had burnt them!! Turns out, the top layer turns nearly black while cooking. This has no effect on the flavor what so ever, and the texture of this 'layer' is not crisp or anything.
My mom had a hard time eating these brownies once I told her the main item was beans... so maybe you shouldn't reveal your "secret ingredient" to just anyone. Let it be something personal to the chef! ;)
I only used 10 dates in my recipe, but that is because I am used to no sugar so 10 was plenty for my sensitive taste buds. If I were to make them for anyone else, I definitely would use 15-20.
I also would love to point out how thick this brownie mix is! I expected it to be different than store bought, but this surprised me. It was already fudgy and delicious before cooking! Usually, the boxed stuff you buy is really liquidy.
Anyways... you have seriously GOT TO TRY THESE OUT. I am sure you could also find a healthy icing recipe (perhaps I will create one soon?), or you could just do what I did... top it with some all natural peanut butter and sliced strawberries, and call it a day. YUM ;)

WIAW #3: Wait, Its Thursday
Okay, so it isn't Wednesday. I know. Embarrassingly enough, I actually think I have been posting these on Thursday's anyway. I think somewhere in my head, I thought "What I Ate WEDNESDAY. So, it is what I ate ON Wednesday." Oh dear... I'm still learning.
Anyways, I have been busy all this week working at VBS! VBS=Vacation Bible School. I am a crew leader, and have a bunch of 1st graders to watch over, guide from station to station, and over all act as a good role model for.
They can be a handful at times, but I really do love helping out each year. It is rewarding in the end! This year's theme was a Medieval one. Sadly, tonight is the last night... to end a week of fun with a bang, they are letting all the kiddos (and yes, even leaders too!) dress up like princesses or knights. I am considering what to wear as I type this...
Me with just a few kids I am watching. Don't I look tired? Haha!
I have to leave the house around 5 to get to the church at time, and usually don't get home until past 9. Then I try to work on meal plans some or blog, and usually pass out afterwards..
I am trying to get in as many normal meals as possible... here are my eats from Wednesday (next time, I will get it right and actually POST on Wednesday, I promise! ;) )
Breakfast:
Me and my food combinations. Oh, well.
Anyways, I got a lot of healthy fats in here! Two strips natural turkey bacon (haven't eaten bacon for YEARS. So at the store last weekend I FINALLY found a good brand and picked it up!!), and then one of my awkward looking Protein Packed Pancakes. I added some blueberries and strawberries to the mix before I cooked in in the leftover bacon grease, plus a bit of coconut oil. All topped with peanut butter of course!

WIAW #2
I am going to use this as my official "WIAW" banner from now on! Ugg, so fancy I can hardly stand it.
I am excited to announce my 2nd WIAW. Today was filled with fun, I went visiting family with my great aunt and (being from a family of thrifters) joined her as we roamed around some second hand stores.
Our thrift finds:
Top: My sister found a boat load of nerdy items (that, ahem, yeah I totally would never obsess over...;) ). Harry Potter figurine, Harry Potter board game and book, Lord of the Rings and Pokemon books
Middle: My aunt picked up a certain fancy glass plate that my mom collects.
Bottom: We found a new Fossil wallet!! For my momma, she has always wanted one. It came from the manufacturers, so the bottom was ripped by them a bit when they sent it out to be resold, but we will fix it with some leather glue.
Now, on to the food!
Breakfast:
Savory oatmeal. Recipe soon? Okay.
Looks really odd, but basically it is just oats with savory ingredients (meat, veggies, ext) instead of sweet things like fruit. I topped mine with some nooch' (again, taking after Else from Hungry Hungry Hippie... lord, if I met that women we would be fast friends.)
Lunch/ Snack on the go:
Apple and peanut butter. Can't go wrong there, friends. It is small I know, but I was on the go and not home for the majority of the day. I took what I could get!
Dinner:
From left to right: Baked sweet potato, a new recipe that even though i'm still coming up with a good name, AH MY GOSH IS SO AMAZING I WILL SHARE IT SOON, and some Savory Style Lima Beans with Cilantro
So good, and filling. This is what I LOVE about healthy eating... you can eat foods that taste so darn yummy, they just have to be bad for you... when really there's nothing guilty about them! ;)
Well, that's all i've got for you today folks... I really am starting to dig this WIAW thing. Lots of fun!

I am excited to announce my 2nd WIAW. Today was filled with fun, I went visiting family with my great aunt and (being from a family of thrifters) joined her as we roamed around some second hand stores.
Our thrift finds:
Top: My sister found a boat load of nerdy items (that, ahem, yeah I totally would never obsess over...;) ). Harry Potter figurine, Harry Potter board game and book, Lord of the Rings and Pokemon books
Middle: My aunt picked up a certain fancy glass plate that my mom collects.
Bottom: We found a new Fossil wallet!! For my momma, she has always wanted one. It came from the manufacturers, so the bottom was ripped by them a bit when they sent it out to be resold, but we will fix it with some leather glue.
Now, on to the food!
Breakfast:
Savory oatmeal. Recipe soon? Okay.
Looks really odd, but basically it is just oats with savory ingredients (meat, veggies, ext) instead of sweet things like fruit. I topped mine with some nooch' (again, taking after Else from Hungry Hungry Hippie... lord, if I met that women we would be fast friends.)
Lunch/ Snack on the go:
Apple and peanut butter. Can't go wrong there, friends. It is small I know, but I was on the go and not home for the majority of the day. I took what I could get!
Dinner:
From left to right: Baked sweet potato, a new recipe that even though i'm still coming up with a good name, AH MY GOSH IS SO AMAZING I WILL SHARE IT SOON, and some Savory Style Lima Beans with Cilantro
So good, and filling. This is what I LOVE about healthy eating... you can eat foods that taste so darn yummy, they just have to be bad for you... when really there's nothing guilty about them! ;)
Well, that's all i've got for you today folks... I really am starting to dig this WIAW thing. Lots of fun!
